Oh there are so many. Of course it would be cool to see something we haven't seen/heard on a bootleg. But of those I have heard on bootlegs, I'd take any show from the European dates 1992 and 1993. Some of my favourites from this era:
05.26.92 - Olympic Stadium, Berlin, Germany
06.27.92 - Stadio Delle Alpi, Turin, Italy
06.19.93 - M?ngersdorfer Stadion, Cologne, Germany
Or maybe something from the GN'R/Metallica -tour, these I really like:
07.18.92 - Giants Stadium, East Rutherford, NJ
10.06.92 - Kingdome, Seattle, WA
And then the obvious ones:
08.03.91 - Great Western Forum, Inglewood, CA
08.13/14.91 - J??halli, Helsinki, Finland
12.13.91 - Madison Square Garden, New York, NY
But really, I'd take any show from any given date. The coolest thing would still be (in my opinion) some kind of a documentary of the whole UYI tour.

Osaka 12/16/2009 (boss show, second longest show in GN'R's entire history)
Vegas 2014 (maybe a compilation video of different days of the residency)
