Italy, Spain, Portugal and Amsterdam

I'm hitting up all four countries in a month. I got about 3 weeks. Planning on spending just a couple of days in Amsterdam, just under a week in Portugal (maybe 4 days tops) and split the rest of the time in Italy and Spain.
Any suggestions/recommendations/advice on where to go, what to see, what to eat, etc???
Only things I know for sure is that i'm going to Milan and Rome and Barcelona. Everything else is up for debate at the moment.

You should hit Venice...interesting place, and Florence as well.

Yeah Venice is stunning too. It's worth keeping in mind that Europe has fantastic rail service.
If you're from the US, these trains are a little bit like the "trains" that we have in North America. Except that they're clean, fast, comfortable and reliable.
But wherever you go, if you don't travel a lot you MUST take steps to protect your personal documentation. Leave a photocopy of your passport and ID with someone at home. Don't carry your passport somewhere that you can easily have it lifted. If your room has s safe, use it. I travel a fair bit and I tend to be a little paranoid about my documents, yet I was seconds away from having my passport and cash lifted from me on a train in Rome. The only saving grace was that I heard the velcro pouch opening up.

def good advice, I've taken some overnight trains in europe before and I always more or less strap my money/documents to my chest before I go to sleep

I assume it could be easy to get sidetracked while in Amsterdam and the snack budget would increase tremendously

Prague, London, Paris, Rome...those are the cities for seeing.
Even still, 'Dam got that great freedom feeling. After being there you think to yourself..."why isn't every country like this?".
