I dont know why but every time you post - you manage to make me feel like total crap Wink.  Good work.

Anyway:  Here is the food pyramid - this should show what some people are and are not DOING.  Remember that you also need to REACH the required amount of food... not less.

Thai food is usually pretty healthy, because it's cooked with natural products and herbs/spices instead of additives or dyes.

You could have Thai noodles(comes in different flavors) with steamed broccoli and baked chicken for a main dish.

Stick to the basics - moderation is the key

Minimise red meat and try and eat more chicken and fish

Plenty of grains and brans

Try and eat whole grains

5+ veges and fruit per day

Natural sugars

Limited fats

Truckloads of water

Baked Eggplant Sandwiches

"There are sandwiches, there are sandwiches with eggplant... and there are Eggplant Sandwiches! Who needs bread anyway?"

Original recipe yield: 4 servings.
Prep Time:15 MinutesCook Time:30 MinutesReady In:45 MinutesServings:4 (change)

--------------------------------------------------------------------------------

INGREDIENTS:
2 tablespoons olive oil, divided
2 cups panko bread crumbs
2 teaspoons salt
1/2 teaspoon ground black pepper
1 cup all-purpose flour
1 egg
1/4 cup water
1 large long eggplant, cut crosswise into 1/3 inch thick slices
1/2 cup finely chopped onion
3 cloves garlic, minced
5 ounces fresh goat cheese
1 cup shredded sharp provolone cheese
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil leaves
ground black pepper to taste
1/2 cup pomegranate molasses

DIRECTIONS:
Preheat the oven to 450 degrees F (230 degrees C). Coat two large baking sheets with olive oil.

In a medium bowl, stir together the panko crumbs, salt and 1/2 teaspoon pepper. In another bowl, whisk together the egg and water. Place the flour in a third bowl. Coat each slice of eggplant with flour, shaking off the excess, then dip into the egg, and finally coat with panko crumbs. Place on the oiled baking sheets.

Bake for 12 minutes in the preheated oven, then turn over the slices and bake for an additional 12 minutes, or until golden brown. Remove from the oven and cool slightly, but leave the oven on.

While the eggplant is baking, heat 1 tablespoon of oil in a skillet over medium heat. Add the onion; cook and stir until almost tender, then add the garlic. Cook for just about 1 minute. Remove from the heat and stir in the goat cheese, provolone cheese, parsley and basil. Season with pepper.

Divide the cheese mixture among 8 slices of the eggplant (half). Spread to cover, then top with remaining eggplant slices, pressing to compact. Return to the baking sheets.
Bake in the preheated oven until eggplant is crisp, about 15 minutes. Place two sandwiches onto each serving plate, and drizzle with pomegranate molasses.

Mushroom Soup with Winter Vegetables

A hearty winter soup consisting of caramelized onions, mushroom stems, carrots and celery.

Yields: 10 cups

INGREDIENTS:
2 heads garlic
6 tablespoons unsalted butter
2 large onions, chopped
1 1/2 pounds assorted wild mushrooms, sliced, stems reserved
8 carrots, peeled and cut into 1/2-inch pieces
2 ribs celery, chopped
8 sprigs plus 1/4 cup chopped fresh parsley
1 bay leaf
1 butternut squash (about 2 1/4 pounds), peeled, seeded, and cut into 1/2-inch cubes
1 cup light red wine, such as pinot noir
2 teaspoons salt
1/2 teaspoon coarse-ground pepper
2 tablespoons fresh lemon juice


DIRECTIONS:
1. Roast the garlic: Heat oven to 400? F. Cut about 1 inch off the top of both heads of garlic, dot each with 1 tablespoon butter, wrap in foil, and roast until soft -- about 45 minutes; let cool and squeeze to release the roasted meat. Discard the skins and set meat aside.

2. Make the vegetable stock: Melt 1 tablespoon butter in large saucepan. Add half the onions and cook over low heat until caramelized -- about 25 minutes. Add the mushroom stems, half the carrots, and the celery and cook until soft -- about 10 minutes. Add 8 cups water, parsley sprigs, and bay leaf, increase heat to high, and bring to a boil. Reduce heat to low and simmer for 45 minutes. Strain and discard the solids. Add enough water to bring stock to 6 cups. Set aside.

3. Make the soup: Melt 1 tablespoon butter in a large Dutch oven over medium heat. Cook the mushrooms in thirds, adding an additional 1 tablespoon butter with each batch, until golden -- about 3 minutes per batch. Add the remaining onion and cook until softened -- about 3 minutes. Add the squash and remaining carrots and cook for 2 minutes. Add the red wine, salt, pepper, roasted garlic, and reserved vegetable stock, stir to combine, and bring to a boil. Reduce heat to low and simmer until vegetables are tender -- about 25 minutes.

Food fixes:

Skin problems and diet solutions

Flaking and roughness: you could lack essential and other fatty acids. Try salmon, canola oil and flaxseed. (If this or any other skin trouble persists, consult a dermatologist.)

Oily flakes: If your skin is both greasy and flaky, you could be missing vitamin B6. Try whole grains, fish, chicken, nuts and legumes.

Easy scarring and bruising: You may need more vitamin C or iron. Try fruits like guavas, papayas, oranges and strawberries for C; lean beef, fortified cereals and soy nuts for iron.

Brittle, peeling nails: You might be low on biotin, a B vitamin. Try eggs, cereals and yeast breads.

It's not fattening. If you consume too much, then you could become bloated. In that case you could take a water pill or let it go the natural way. But it has zero calories and fat.

Alcohol, sodas, fruit juices, and energy drinks are fattening, because of the amount of sugar they contain.
